Our client is a prestigious Michelin star restaurant renowned for their commitment to culinary excellence and personalised warm service.

 

As the Sommelier/ Bar Manager you will play a pivotal role in ensuring the guests enjoy a memorable and pleasurable dining experience.

 

Salary& Benefits:

  • £35,000 + £4k-£5k in service charge 
  • Restaurant closed Monday & Tuesdays, opening for Dinner on Wednesdays

The role will involve: 

  • Table Beverage Service: Welcoming and cater to a section of tables in the restaurant or a private group upstairs during service.
  • Menu Knowledge: Understand the ethos, menus, ingredients, cocktails, soft drinks, and the restaurant’s carefully curated by-the-glass wine list. Provide succinct and passionate recommendations to guests at their tables.
  • Drink Presentation: Present drinks with enthusiasm and engaging descriptions, enhancing the guests’ overall experience and pairing wines with the stunning dishes. 
  • Cocktail Expertise: Prepare a high-quality house cocktail list and suggest changes to the cocktail selection.
  • Wine Pairings: Coordinate wine pairings with the tasting menu, collaborating with the General Manager in planning the pairings.
  • Stock Control and Cellar Management: Take charge of stock control for all bar products, including regular stock takes with the GM. Maintain pristine cellars, especially if guests are given access.
  • Wine Knowledge: Develop a comprehensive understanding of the wine list, making recommendations to guests based on their preferences, budgets, and food choices.

 

We are looking for a Sommelier/ Bar Manager with proven experience in a high-end fine dining restaurant/ hotel establishment. You will have strong knowledge of wines, cocktails, and beverage service and wish to work in a supportive and close-knit team that values collaboration and excellence.
