This week, we’re shining the spotlight on Michael Chapman, the Executive Chef at Heckfield Place!🌟 We asked Michael six questions to delve deeper into his world, uncover some industry insights, and learn what he prioritises when building his team!🙌🏼✨   🔑 What kick-started your career as a chef? “Came overseas started work at a small hotel, learnt how to cook by purchasing cook books, first cook book was one from Delia Smith then progressed to Gordon Ramsey “a chef for all seasons”. As a gift ate at Petrus (Marcus Waring) at the Berkley Hotel – chef’s table, immediately wanted to join that team, wanted to learn quickly as this was a total career change for me.”   🔑 What is your favourite dish on your menu right now? “Ex farm dairy cow with roast beetroots, carrots and salsa verde – 95% of that dish comes from our estate, massive achievement for the kitchen to utilise as much as possible from our farm and estate team.”   🔑 What would be your number one piece of advice for a chef looking for a new role? “Hard work and dedication will get you there, once you know the style/cuisine that drives you – find that mentor and work your socks off under them.”   🔑 Who is your culinary idol? “Dan Barber (blue stone) Doug MacMaster (silo) – everything begins with the soil and sustainability. They both are huge contributors to educating the food service industry with regards to how we must respect the environment and the way we farm and produce/ source our ingredients.”   🔑 What has been the highlight of your career so far? “2016 Michelin Star 2022- green Michelin Star. Being part of the wider Heckfield team and being able to work with Skye Gyngell.”   🔑 What key attribute do you look for in someone when recruiting for your team? “Honesty and passion for produce/cooking in this industry.
