Responsibilities as the Head Pastry Chef…
- Leading, training, and mentoring a well-established pastry team of 16.
- Overseeing the pastry operations for a Modern British fine dining restaurant (70 covers), afternoon tea (60–130 guests), and three private dining rooms.
- Creating and executing modern, high-end pastry menus for all dining areas.
- Ensuring smooth kitchen operations through strong organisation, leadership, and stock control.
- Collaborating with the Executive Chef to develop seasonal and innovative menus.
